Background
To our knowledge, date fruit is consumed as whole fruit with low transformation and valorization.
However, this fruit can be a potential raw material for the production of healthy and sweet snacks
and by products that ca be used as substitutes of sugar or industrial snacks…
Aim
o Develop and produce easy and healthy date fruits byproducts.
o Enhance the substitution of industrial/artificial ingredients and snacks by healthy byproducts.
Co-creation with societal actors
Visit with students to a date fruit cooperative/small processing unit and learn about date
transformation and processing.
Implementation
o At the school, co-elaborate easy processes for syrup and paste production based on date fruits.
o Each student try, at home scale, to produce small quantities of syrup and paste (homemade
byproducts).
o At school canteen, students present their homemade by products (with date fruits) and taste
them together.
o Second visit will be planned to the date fruit cooperative/small processing unit for improving the
process of syrup and paste production.
Reflection
Students reflect on how improve the process of “date fruits by products” production and what are
the potential recipes that can be fortified with date syrup and paste!!
Futurel Plans
o Develop healthy and homemade snacks based and fortified with date syrup and paste.
o Disseminate the results of this “students project” to other schools through flyers (with process
and photos of byproducts and snacks) and tasting sessions.
